I think you ultimately must choose to rely on your own perceptions, otherwise it could become quite difficult to "pick and choose" which ones you trust and which ones you don't.
If your unsure if a gallon of milk has gone bad and don't trust your sense of smell that much at all, you may use your eyes to visually verify and even ask a friend to use his/her sense of smell to additionally verify. These 2 verifications go toward you're overall perception. Even if in the end you decide that you "don't know" and throw away the milk to be cautious you're trusting that your perceptions have brought you to a safe conclusion.
