Contextual analysis of the events described or language spoken and the way the language is used helps to determine the age of many of these texts. It's all referenced to other texts from the time etc. I doubt carbon dating would give you any usable information about time of the documents.
From what I've read, ancient document dating is entirely contextual and linguistic.
