I know your problem mate, though not with the religious part there.
In my case, there are some rather striking opposites though, first and most important one is, we are on each our side of the damn globe, as far away from each other as possible.
She is a strict vegan, though not one of them militant ones(thank the nonexisting gods) where as I rather much like meat, I'm a part time butcher you could say, helping slaughtering sheep in authumn.
Killing whales whenever they appear here, (search faroe islands, on wiki)
And yet it works out, she will not try convert me to the vegan way, and I won't defend killing of animals in any way.
In your case I think you two should just work out some agreements concerning your differences, she won't preach and you'll not be to critical against her religion, and heaven forbid anyone of you trying to convert the other either way.
